Résumé / Abstract
Nowadays, there is a growing group of consumers that ask for edible oils with natural characteristics, such as the total absence of chemical manipulation, original and genuine flavour. Therefore, a new market for these cold pressed seed oils is born in northern Europe, Germany, United Kingdom, France and Switzerland. These new products, marketed as high quality products, do not have the same guarantees and genuinity as extra virgin olive oil. There is a lack of legislation and a great disparity in production processes. In this work, the quality of these cold pressed seed oils has been controlled using various analytical determinations. Some of these have often been used in the laboratory routine analysis, in order to give a basic indication of the lipid matrices such as acidity, peroxide value, anisidine index, etc. Other specific analyses are used for the genuinity determination of the virgin products such as stigmasta-3,S-diene and trans fatty acid composition. There are other analytical tests, like the control of the oxidative index, which are not yet official procedures, but can give useful indications of the oxidative situation. The results show a great disparity in the quality of these products that, in many cases, do not correspond to the expectations of the consumer. The responsibility for this is partly due to the lack of legislation that allows the marketing of cold pressed seed oils without the use of genuinity parameters.
