Résumé / Abstract
Mycotoxins are secondary metabolites produced by filamentous fungi. They are toxic for human beings and animals, so their presence in food and feeds implies a risk for consumers. At present over 50 countries have restricted the levels of certain mycotoxins in products for human and animal consumption. Particular attention has been paid to aflatoxins. However due to the non-homogeneous mycotoxins distribution on a given batch of non-processed food, the only imposition of limits of contamination is no enough to protect both consumers and producers. A complete sampling plan is needed. This article discusses the necessity of such sampling plans in mycotoxin analysis and describes the steps that should be followed to adopt them. Examples of various sampling plans are discussed, such as the one adopted by the EU. It is established the frequency of sampling, the amount and weight of samples, sampling and subsampling methods and the characteristics of an analytical method to be adopted for official control of aflatoxins in different foods.
