Résumé / Abstract
Given the importance represented by the zucchini cultivation in the area surrounding Latina, both in terms of quality and amount produced, some studies were made. Qualitative-technological and chemical-nutritional analysis have been carried on in order to characterize the product and to supply valid information to demand and obtain a quality label (IGP, Protected Geographic Indication) attesting its origins. Tests, regarding cv. President, did cover the entire production season (March-December) and precisely 9 times samples were taken from 84 farms for a total of 1,700 fruits. Thesis were distinguished on the base of: pedological soil type (clayey, sandy), fertilising system management (traditional, low impact), production systems (greenhouse, open field). The qualitative-technological analysis are represented by: consistency test, carried on with a digital dynamometer, spectro-colorimetric analysis, using an imaging specro-photometer. Chemical-nutritional determinations analysed the composition of: sugars, organic acids and vitamin C, basic compositions, effectuated on homogenous pool by harvest date. Results showed the samples as uniform and homogenous, highlighting meaningful differences only for the thesis concerning the two different production systems, which are justified by the influence of substantially different environment conditions. These qualities indicate that the qualitative level of the product in the area nearby Latina is constant in time and therefore of interest to require the IGP qualitative label.
