The composition of tannin isolated from a red wine (cv. Pinot noir) was investigated in order to improve our understanding of the associated pigmentation. Utilizing a variety of analytical techniques including high performance gel permeation chromatography, acid catalyzed cleavage, nuclear magnetic resonance spectroscopy, mass spectrometry and UV/Vis spectrophotometry, evidence for the direct condensation between anthocyanins and proanthocyanidins was found. By mass spectrometry, polymeric direct condensation products consistent with an anthocyanin linked to a proanthocyanidin containing 7 subunits were observed.
