Résumé / Abstract

Polyphenols are a large ubiquitous naturally occurring plant compounds. They are widely distributed in vegetables. fruits, cereals and beyerages, t. ex. wine. tea and coffee. Consumption of polyphenols in humans is more than 1 g per day. Biological activities of polyphenols strongly depend on their chemical structure. Current interest of biological activiries is due to their antioxidant properties. As a conseqence numerous polyphenolic compounds prevent of atherosclerosis, cancer and chronic inflammation. This paper presents proceses of absorption and transformation of polyphenols which make this compounds bioavailable Metabolism as well as inactivation of polyphenols have been discussed.
