Résumé / Abstract

The interest in tofu is not only to the high amount of proteins and low fat content, but for its benefits in health. I have chosen rats to observe their biological response to tofu intake. A number of 20, six weeks old female Wistar Hannover rats were used in the experiment. The body and organs weight decreased in the treated rats in comparison to control. There are significant differences in the weight, on their body, heart, liver and spleen, but not in the kidneys. The tofu diet plays an important role on the weight, which is confirmed due to the high correlation (P < 0.01) between them. Although, tofu could be include in diets to reduce obesity. Alkaline phophatase activity increased in the rats fed with tofu, however a supplement of calcium is necessary to reach the normal levels. The glucose content is lower in the tofu diet, for the sake of, tofu could be included in diabetic diets. The mineral content determined in the serum showed that calcium and zinc decreased, but potassium and magnesium increased, as a result of this the diet should be supplemented with calcium and zinc. On the other hand is a good source of magnesium and potassium. The isoflavones found in tofu by HPLC were about 0.06 mg/g fresh weight for genistein and 0.12 mg/g fresh weight for daidzein and they were identified only in the serum of the rats fed with tofu. Their present is important due to the important role that they play as antioxidant and antiproliferation of the cells.
